LISTEN AND TASTE
eine kulinarische Horchsituation für einige Feuerstellen, einen Koch, Bratendes, Siedendes, horchendes und essendes Publikum.
Die Nahrungsmitteldesigner wissen es: das Auge isst mit. Das Ohr auch, denn nicht umsonst wurde z.B. das Krustimeter erfunden, mit dem man die Crunchqualitäten der Kartoffelchips messbar gemacht hat. Dennoch stellt sich die Frage, ob das Ohr wie das Auge schon im Vorwege Aufschluss über den Zustand und die Beschaffenheit der Nahrung geben kann. Lässt sich anhand der Bratgeräusche  unterscheiden, ob man tatsächlich jenes  Stück Fleisch im Mund hat, welches eben noch brutzelnd in der Pfanne lag? Ließ einen der Bratklang nicht  möglicherweise etwas anderes erwarten?
Listen and taste ist eine Versuchsanordnung, die eben dieser Frage nachgeht.
Dem Versuch geht allerdings  keine Hypothese voraus, denn wir kennen das Ergebnis schon, es gibt keine Überraschung und somit auch keine Enttäuschung (im Wortsinne). Wir werden auf keinen Fall den Bratklang mit dem Geschmack des Bratlings in Einklang bringen, aber klingen tut es dennoch erstaunlich.
Darüber hinaus bleibt uns die Freude an der Bestätigung, keinen Geschmack vorhören zu können.

 

LISTEN AND TASTE

A culinary listening-situation for several firesites, a chef, frying and boiling food, and a listening and eating audience.
 Food-designers know that the sizzle sells the steak. It is not for nothing that they have invented the Krustimeter, for example, which has made it possible to measure the crunching quality of crisps. But still there is the question if ear and eye are able to make conclusions about the condition and consistency of food prior to eating. Is it possible to determine by means of the frying noise if the piece of meat in your mouth is really the one that you just heard sizzling in the pan? Has the frying noise not made you expect something different?
Listen and Taste is an array of experiments that pursues exactly that question.
However, there is no hypothesis that triggers the experiment, because we already know the outcome. There are no surprises and therefore no disillusions (in the literal sense). We will by no means accommodate the frying noise to the taste of the  burger, but it still sounds astonishing.
In addition, we still have the satisfying reassurance that we cannot pre-hear tastes.
